Simple Rice N’ Stuff

Tips

Super simple rice and egg dish that uses up leftover rice! A great way to get your day started with a healthy balance of fat, carbs, and protein! Add any other veggie you want to make a bigger stir fry or just leave it plain and simple. Don’t forget to also use this chance to learn about Asian racism here in America and ways you can be an active anti-racisit!


Ingredients

  • 1 cup leftover white rice (freshly cooked will work too)

  • 2 eggs

  • 1-2 Sliced scallions

  • Tamari (or any soy sauce)

  • Avocado oil

  • Salt


Preparation

  1. Put about 1 Tbsp Avocado oil in a skillet and heat up the pan.

  2. Add in rice and spread out evenly in the pan.

  3. Crisp up the rice for about 3-5 min and then flip/stir the rice and re-spread. Cook for another 3-5 min or until the rice has some slightly light brown spots.

  4. Crack both of your eggs over the crispy rice and stir the eggs into the rice.

  5. Add ¾ of your sliced scallions and stir.

  6. Cook the entire mixture until the eggs are thoroughly cooked.

  7. Take the mixture out of the pan and put it into a bowl.

  8. Add the rest of the fresh scallions as a garnish on top.

  9. Drizzle some Tamari on to your liking (Tamari is strong so you don't need a lot) and serve! <3
