German Potato Salad

Tips
German potato salad is a delicious way to add some good carbs to any savory meal! Something to be very mindful of while making this dish is to not overcook the potatoes as to where they become mushy and start to "mash".
Ingredients
1lb red potatoes
4 slices of bacon
¼ cup fresh chopped parsley
3 large cloves of minced garlic
⅙ cup apple cider vinegar (ACV)
1 ½ tbsp sugar
½ tbsp dijon mustard
Salt
Fresh ground pepper
Preparation
Wash potatoes and cut them into ~½ in cubes
Put potatoes into a large pot and fill the large pot with enough cold water to cover potatoes by 2 in.
Bring water to a boil and add ½ tbsp salt.
Cook potatoes on a low simmer for ~15 min or until soft but not mushy.
While potatoes are cooking, cook the bacon until slightly less than done.
Remove the bacon from the pan (save the grease in the pan, you'll use the grease and the pan later) and set aside on a plate.
While the potatoes are still cooking and the bacon is done, you can make the sauce.
To make the sauce you will add the ACV, sugar, dijon mustard, a pinch of salt, and fresh ground pepper in a small bowl and mix.
When the potatoes are done cooking turn off the heat, drain the water, and leave the potatoes in the pot with the lid on.
Put the sauce in the bacon grease pan and bring it to a simmer.
Add garlic to sauce and continue to simmer until garlic is starting to cook.
Remove heat and add potatoes to the pan. Stir until potatoes are covered with the sauce.
Stir in parsley to the mixture, being careful not to "mash" the potatoes.
Serve!
